Looking for inspiration for a healthy Christmas treat for children to give as gifts?
Indrani has been coming home with a candy cane with a Christmas card almost everyday. She wanted me to buy some so she could give them out with her Christmas cards. I chatted to her about the art of giving a gift made by her love and perhaps one that is just as tasty but much healthier for her friends. So she agreed, and I taught her how to make her own caramel popcorn. For an extra personal touch, she drew her own card and we colour photocopied it.
Not only is this recipe great because you can get the kids involved in making it but it’s also processed sugar free. The best bit was that Indrani’s friends didn’t even realise it was processed sugar free and they loved it!
Ingredients
- 4 cups of Puffed Corn (found in health food aisle at Coles / Woolworths)
- 125g butter
- 1 cup of Rice Malt Syrup
- 1/4 tsp Bi-Carb Soda
Method
- Preheat oven to 150 degrees celcius.
- Put Puffed Rice into a big bowl.
- Melt butter and Rice Malt Syrup over low heat, stirring constantly.
- Allow to boil for 3 minutes (this will start to turn the colour a bit more golden). Take off heat.
- Stir in the Bi-Carb Soda. This will cause the mixture to foam up.
- Stir through the puffed corn until all the corn puffs are coated in this delicious sauce.
7. Spread out on baking paper so it’s all flat, then cook in oven for 10 minutes or until it looks really golden.
8. Take out of the oven, give it a little stir then let it cool totally.
Note: This should be crunchy whilst being a little sticky.
This made 10 bags of caramel popcorn (3 good spoonfuls per bag. This is plenty as a gift). Enjoy!
