Looking for inspiration for a different kind of muesli bar?
This is a really simple recipe that’s perfect for the lunch box or after school snack. The bonus to this simple Golden Popcorn Muesli Bar recipe is that you can get the kids involved in making it and it’s also processed sugar free.
I got my inspiration for this recipe from Maria at Real Life Dinner.
Ingredients
- 2 cups of puffed rice
- 1 cup oats
- 1/4 cup pepitas
- 1/4 cup craisons
- 1/4 cup sunflower seeds

125g butter

3/4 cup rice malt syrup*

1/4 tspn bicarbonate soda
* If your new to removing processed sugar from your diet, you may want to increase the rice malt syrup to 1 1/4 cups.
How to
- Preheat oven 180 degs

Get the kids to measure all the dry ingredients except the bicarbonate soda.

Mix all the dry ingredients together with hands.

Melt the butter and the rice malt syrup. Stir continuously for 3 minutes. Mixture should be bubbling and boiling by this point.
- Add the bicarbonate soda. This will cause the mixture to froth up.

Stir through dry mix.

Press into lined pan.

Bake in over 20 mins until golden.

Let cool in pan. Take out & cut into bars of your size.

Store in air tight container
