A good source of protein is essential for the lunchbox. It helps fill the tummy and fuel the mind. This Poached Chicken recipe can be used for sandwiches, pizzas and a variety of salads.
Ingredients
- 1 Chicken Breast (pref organic, but definitely hormone and antibiotic free)
- 1 clove of garlic – cut in half
- 2 tspns mixed italian herbs (or your favourite herbs)
- A good sprinkling of salt & pepper
- Water or good quality stock
Directions
- Place chicken breast, herbs and garlic in a saucepan.
- Cover with water or stock.
- Bring to boil.
- Reduce heat, cover and simmer for 10 minutes.
- Remove from heat and allow to sit for 5 minutes.
- Remove from water.
- Slice or shred breast depending on your choice of use.
Freezing / Storing Instructions
Allow shredded chicken to stop steaming, then place in shallow air-tight container and put it in the fridge or freezer. In the fridge, the chicken will last 3-4 days and in the freezer about 4 months. (source: Still Tasty)
