I bought a truckload of bananas for just 49 cents per kilo. Most of them I’ve frozen and set aside for my Mad Food Science Classes but I kept a few aside for the family too. This banana muesli lunchbox slice recipe is easy to make. It’s perfect for the lunchbox or with a cup of coffee or tea.
I have a friend who calls herself the Kitchen Assassin because she says she is hopeless in the kitchen. I tell her I too have what my kids call Epic Fails in the kitchen. I am certainly no Master Chef, but I usually only post the kitchen wins. Well this recipe is a kitchen win, but it also happened to be an Epic Fail first too. I’ve included my fail shots too so you can see what can happen if you do not follow step 8 of letting it totally cool in the pan before lifting out. If you have kitchen fail, don’t be discouraged – get creative, turn it into something else, the family will never know. Or you could always adopt the approach of serve it the good side up – lol!
Ingredients
- 2 cups oats
- 1/2 cup brown rice flour
- 1/2 cup dessicated coconut
- 1 tspn baking powder
- 2 tblspns chia seed (optional)
- 2 handfuls organic raisins
- 1/4 cup pepitas, chopped
- 1 tspn cinnamon
- 2 large bananas, mashed
- 160g butter
- 2 tblspns rice malt syrup
- 1 tblspn tahini
Method
- Pre-heat oven to 180 degrees and line a lamington tray with baking paper
- Soak the raisis for 5 minutes, then drain
- Place all dry ingredients (from oats to cinnamon) in a bowl and mix together until well combined
- Over low to medium heat, melt the butter with the rice malt syrup and tahini. Stir until completely melted and combined
- Add in mashed banana and stir until delicious thick looking syrup forms
- Stir the syrup through the dry ingredients gently – ensure all dry ingredients are totally coated with the syrup
- Spoon the mixture into your lined tray, and spread out evenly. Press down firmly with the back of a spoon
- Bake in oven for 25 – 30 minutes until golden brown on top
- Leave to cool in the pan completely before cutting or attempting to lift out of the pan – this is important otherwise the picture below happens.
IMPORTANT – wait for slice to cool in pan – totally else this happens – it crumbles and for me, I also dropped it on the floor.
Storing / Freezing
Store in an air tight container. Best stored in freezer then popped straight into the lunchbox. It will defrost by recess.
