Try these Chocolate Breakfast Puffs for a real food treat for brekkie. Many years ago before I learnt to ask what’s in my food, every holiday season I would buy the kids Coco Pops as a special treat (of course, now I no longer think of foods laden with ingredients made in a lab as a treat). These school holidays I decided to make my own real food version as a treat for breakfast. These Chocolate Breakfast Puffs are not an everyday breakfast for my kids because I have spent too long getting off the breakfast cereal train, but if your kids are used to having the standard breakfast cereals, this is likely to be a more nutritious version than any off the shelf kind.
Ingredients
- 2 cups puffed rice
- 2 cups puffed corn
- 1/2 cup shredded coconut
- 1/4 cup pepitas
- 1/4 cup sesame seeds
- 110g butter (use a smaller amount of coconut oil if you want dairy free)
- 1/3 cup rice malt syrup
- 40g cacao powder
Method
- Preheat oven to 180 degrees
- Line a large baking tray with paper
- Add the puffed rice, puffed corn, coconut, pepitas, and sesame seeds (don’t worry if this looks like it’s too much for the tray because the puffed corn shrinks down when cooked)
- Use your hands to mix this all around on the tray
- Over medium heat, melt the butter and the rice malt syrup until combined
- Add the cacao powder to the buttery syrup and mix well
- Remove from heat and pour over the dry ingredients on the baking tray
- Use a large spoon to gently turn over the dry ingredients until all ingredients are coated in the chocolate mixture
- Pop into the oven for 5 minutes, stir around to turn over, then pop back in for another 3 minutes
- Remove from heat and allow to cool before storing.
Just like a chocolate milkshake, only healthy …. haha…
Freezing / Storing Instructions
Not suitable for freezing. Best stored in an airtight jar or container.
Another 2 ways
- Add some goji berries to the dry mix for bit of a sweet burst
- Mix this up with my seed and trail mix for a great afternoon snack. Keep a jar of this in the car so when you’re on drives and someone says “I’m hungry”, you have a ready made healthy snack rather than stopping at a petrol station or road side stop.
Just a reminder, you don’t need to be a master chef, or have a big spotless kitchen to make awesome nutritious meals or snacks for your family.
