This is a great refined sugar free lolly recipe for Halloween – you know a real food trick or treat recipe. Our 9 year old daughter came up with the name. The great thing about this recipe is you can the proportions of the ingredients to make all sorts of flavours, but for Halloween we have gone with Green to create these Green Ghoul Gummies and Gizzards.
Ingredients
- 2 handfuls baby spinach
- 1 cup filtered water
- 2 oranges squeezed (fibre removed* see note)
- 3 tblspns rice malt syrup
- 4 1/2 tblspns Powdered Gelatin (I use Great Lakes in Red Container)
Directions
- Boil baby spinach in water for 10 minutes
- Remove spinach from heat and allow to cool
- Now place spinach and it’s liquid in a blender and blitz until smooth and juice like
- Pour 1/2 cup of the green juice into a small saucepan
- Add the juice of 2 oranges (this should be close to 1 cup) and stir
- Add in the rice malt syrup and stir until completely mixed – I use a fork because I find it mixes it better
- Sprinkle the gelatin over the mixture in the sauce pan, and stir to mix in
- Let this mixture sit for 8 minutes (it will be thick and bit lumpy)
- Place saucepan over medium heat, and stir continuously for 5 minutes (this will become smooth and shiny)
- Pour into a lined bread loaf tin
- Place in the freezer for 25 minutes
- Take out of freezer. Use a biscuit cutter of your choice, and push down into the jelly like substance to create your lolly. The leftover bits after you’ve created as many lollies as you can, are the gizzards (which are really just bits of the lolly that aren’t in the shape you’ve chosen).
Storing
Store in an air-tight container in the fridge for up to 1 week.
Note
Keep the fibre from the oranges, then place them in ice cube trays add some water and freeze. Flavoured ice cubes for a refreshing drink or they are great for the kids to suck on for those hot days.
