Pumpkin seeds (pepitas) provide many health benefits and are therefore a great addition to a healthy lunchbox for both children and adults. Pepitas are packed with vitamins, minerals, anti-oxidants, and essential amino-acids. They are a good source of protein and are rich in mono-unsaturated fatty acids which help lower bad LDL cholesterol and increase good HDL cholesterol in the blood. Try adding these delicious roasted pepitas to your lunchbox as a healthy snack option.
Ingredients
- 1 cup Raw Pepitas
- 1/2 tablespoon Coconut or Olive Oil
- 1/2 teaspoon Celtic or Himalayan Salt
- good sprinkle of pepper
Directions
- Pre-heat oven to 180 degrees.
- Combine all ingredients in a bowl, ensuring all are coated well.
- Spread in a thin layer on a baking sheet.
- Bake 5 minutes, stir to turn them over, then bake a further 5 minutes.
- Repeat step 4 again if not golden in colour.
- Allow to cool – they should be crunchy.
Store in a glass jar or air tight container.
Variations: Add some Italian herbs or seasoning to the oil and salt, pepper mix. Make them sweet n savoury by adding 1 tablespoon of maple syrup to them.
