I had some strawberries which didn’t look so appetising but rather than waste them, I thought they would work well in some muffins for the lunchbox. These strawberry lunchbox muffins are a success with the family. They’re simple to make and freeze well too. Pop them straight out of the freezer into the lunchbox and they’ll defrost in time for recess.
This makes 12 full sized muffins.
Ingredients
- 125g butter
- 1/4 cup rice malt syrup
- 2 tblspns pure maple syrup
- 2 large eggs
- 1 tspn vanilla extract
- 1/4 tspn cinnamon
- 2 cups self raising flour
- 1/2 cup milk
- 2 cups of strawberries, chopped roughly
Method
- Preheat oven to 180 degrees
- Cream butter, rice malt syrup and maple syrup – the butter should look a pale colour
- Add eggs, vanilla extract and cinnamon. Beat until really creamy
- Add 1 cup flour and 1/4 cup of milk and mix in gently with a wooden spoon until combined
- Add remaining flour and milk. Mix in gently with wooden spoon until combined
- Add 1 and 1/2 cups of strawberries and stir through the mixture
- Spoon the mixture into prepared muffin tray (I use an ice cream scoop)
- Split the remaining strawberries up and press them gently on top of the muffins
- Bake in oven for 30-35 minutes, or until cooked through (test with skewer – when it pulls out clean, they are cooked)
Storing and Freezing
Place in an airtight container. To minimise chances of freezer burn, place a sheet of baking paper over the top of before sealing the container.
2 Other Ways
- Add some coconut flakes to the top of the muffins or mix a small amount of dessicated coconut through the batter.
- Sprinkle the top with some cinnamon or brush with a bit of rice malt syrup for an extra golden glaze

Israel had to keep getting rid of ants as they crawled over the plate, and he tells me he had to stop himself stuffing the rest of the muffin in his mouth after he took that one bite out of it. The Beatles cup of tea is my favourite cup, and I’m currently reading a book called “Wildwood” by Colin Meloy. It’s one of Indrani’s books that Israel brought back from a trip to Fargo a few years ago, but it’s a great read!
