This Super Simple Lunchbox Pikelets recipe can be used in so many ways. It’s actually a recipe I saw the amazing Jamie Oliver use on stage when he brought The Food Revolution Day to Sydney’s Opera House earlier this year.
It’s also a fabulous recipe to get the kids started in the kitchen. Have a bit of fun with this by putting all the ingredients in a screw top jar, tighten the lid and get the kids to shake the jar like mad. Just like the store bought shake and bake ones, except without the additives and preservatives.
Our 9 year old daughter uses this basic recipe to make Sunday Family Day Pancakes. She’s getting more adventurous now, and mixes the flours so we get more nutrition but it never fails when you keep the quantities of ingredients the same. And she now even makes a double batch so I can use the last lot of the batter to make these Super Simple Lunchbox Pikelets.
What I also love is these freeze really well. This means you can cook in bulk and always have something in the freezer ready to go for lunchboxes. Simply pull them out the night before, pop them in the fridge, then put toppings on them in the morning for the lunchbox.
This recipe make about 24 pikelets
Ingredients
- 1 cup overflowing SR Flour (use GF if you wish)
- 1 cup full cream milk
- 1 egg
Directions
- Mix all ingredients together til there are no lumps or something you may wish to do with the kids is to put everything in a screw top jar, put the lid on and get them to shake it like mad (just like the store bought shake and bake ones, but just better because their are no additives or preservatives.
- Heat a frying pan over high heat. Grease well with olive oil spray or coconut oil.
- Use 1/4 cup to pour small amounts into the pan to make the pikelets – about 8cm in diameter.
- Turn heat down a little. As the pikelets bubble and pop, flip the pikelet over and cook the other side.
- Allow all pikelets to cool on a plate before using in the lunchbox or freezing.
Freezing / Storing Instructions
Store 2 pikelets in individual zip lock bags (once they’ve stopped steaming) and freeze. Alternatively, you can put baking paper in between each set of two pikelets, and then freeze them in one bag.
Another 2 ways to use this recipe
- Spread 2 pikelets with cream cheese then place banana and honey between the 2 pikelets
- At step 4, before you flip the pancakes over, pop a couple of blueberries into each pikelet
Tips
If you want to increase the nutritional value of these pikelets, switch up the flours from just a plain self raising flour to a spelt flour or mix flours – we quite often mix brown rice flour with buckwheat flour. When using flours which aren’t self raising, you will need to add 1 tspn of baking powder and 1/2 tspn bicarb soda.
