Super Simple Wrap Recipe

The year is going so fast and that means that Indrani's 4 month USA Summer Camp Counsellor and travel experience is almost over. She returns this Saturday. We're very excited. She's not so.

Our dinner table conversations are rarely about food (other than to say our gratitude for the meal we are eating). It's fair to say over the last few months, many of the conversations have been about Indrani and her travels. Last night at the dinner table, I burst into tears when I said we are now down to single digit numbers until she comes home. Suffice to say I am beyond excited.

Whilst we are talking about the dinner table, in this weeks newsletter I am sharing the recipe for a really simple soft wrap that I made for last nights dinner (keeping it real - the photo of the wrap is bad. Food photographer I am not).

2 Ingredient Soft Wraps
I know it's hard to tell from this picture, but trust me, these wraps were simple, soft, pliable and delicious. Perfect to go along with the red lentil dahl and rice we had for dinner. You could probably also use them to make salad wraps too. Or even add some scrambled egg, avocado, and tomato.

Ingredients

  • 1 and 3/4 cup self raising flour (I used gluten free but you could use normal SR flour).
  • 1 cup Greek Yoghurt
Method
  1. Place flour into a bowl
  2. Make a well in the centre
  3. Add the yoghurt in the well in the centre of the bowl
  4. Add a frying pan to the stove and turn on (you want a hot pan for these)
  5. Now use a knife to move the yoghurt around so it mixes in with the flour
  6. The dough will start to come together but you'll still have bits of flour that haven't mixed in. Now use your hands to pull all the flour into the dough ball
  7. Gently kneed the dough until it feels soft and smooth
  8. Break it into 6 balls
  9. Sprinkle flour on the bench top, then flatten one of the balls with your fingers
  10. Now roll it out so the dough is thin but so you can still pick it up without tearing
  11. Spray the pan lightly with Olive Oil and pop the wrap into the pan
  12. It will start to bubble up, spray the uncooked side with oil, then flip
  13. Allow it to cook for 1 minute or until you are happy with how it's cooked
  14. Place in between a folded tea towel to keep soft whilst you cook the others
