One of the things I love doing is creating recipes or finding recipes that can be used multiple ways.

Now look, I’m sure you can see I am not a food stylist or photographer. But this vegetarian mix I made can use used like this: burger patties sausage roll filling vego balls (like meatballs but just vegetarian mix)

I designed this vegetarian version of my beef mince hamburger pattie for this month’s Kids Health Cook-Along so that we could cook both recipes – the beef burger and the vegetarian burger with the kids at the same time.

Both the vegetarian version and the beef mince version use 80% of the same ingredients which means I can be thriftier with the amount of ingredients I need to have in the pantry.

Ril, our 10yo, is a real meat lover and he said these were the best sausage rolls ever and Israel reckons I can sell the pattie recipe to our local cafe.

Here’s the recipe if you want to give it a go:

1. Preheat oven to 180 degrees2. Line a baking tray with baking paper3 Peel and dice your pumpkin, drizzle with 1-2 tbs olive oil.4. Sprinkle 3 tsp of BBQ seasoning over the top. Stir around to coat in the seasoning.5. Roast the pumpkin and sweet potato for 30 min.6. Whilst roasting, rinse and drain the beans. Put into a large bowl.7. When 30 mins is up, remove roast veg from oven. Allow to cool for 10 min or more.8. Add roast veg to the bowl with the blackbeans9.Use your potato masher to mash altogether. This needs to be mushy but you can still have some chunky black beans too if you wish.10. Add all the other ingredients (except olive oil)11. Mix all the ingredients with your hands until thoroughly combined.12. Use your hands to form patties or vego balls or use as sausage roll filling.13. To cook as patties, place on baking paper and then brush both sides with olive oil14. Bake in oven for 15 min, turn & cook for another 15 min. If doing the balls, cook for 20 mins, turning midway through.
