I love a good slow cooker meal on busy days. This one is from Kathryn at Fresh Fast & Frugal is so easy. 4 Simple Ingredients, 1 min prep, then slow cooker. The result deliciousness to the table quickly in the evening.

- 1.5 – 2kg (approx) whole chuck roast
- 2 – 3 tbsp honey
- 2 – 3 tbsp wholegrain mustard
- 2 – 3 tbsp Worcestershire sauce
- Remove any string from beef roast, trim off large fat cover and place in slow cooker. You can cut the beef into chunks to speed up cooking, and remove large chunks of fat if you wish. (I tend to just remove the large fat cap and keep the piece of beef whole).
- Mix together remaining ingredients and pour over beef, turning to coat. It is not necessary to add any other liquid – plenty of juices come out of the beef.
- Cover and cook on low for 8-10 hours, or until beef is falling-apart tender.
- Shred beef and serve with roasted veggies, potato or sweet potato mash and steamed greens.
- Leftovers can be stored in portions in the freezer to make easy dinners later. Make sure to include some of the sauce in the container to keep it juicy.
- No slow cooker? Then cook in a covered casserole dish on 140C in the oven for 4-6 hours.
