Over 12 months ago, I started going to RAW Food Cooking Classes at the wonderful Oneness Cafe in Coogee (Sydney). Here is a fabulous healthy recipe Homemade Ice Cream recipe that I got at one of these classes. It’s dairy free and does not require an ice cream maker (although I am sure this would make it easier).
Homemade Vanilla Bean Ice Cream
(I know this post would be better with a photo but I have ran out of time. I’ll add one when I make it at Christmas time).
Ingredients
1 cup of RAW cashews
1/2 cup filtered water
1/4 cup of Agave Syrup (or honey)
1 Vanilla Bean
Method
- Mill/Pulse/Blitz (whatever your food processor calls it) the cashews until they resemble a fine powder
- Add the water & Agave Syrup, & add the scrapings of the vanilla bean
- Blend in the food processor, starting slow & gradually increasing speed to top level. Blend until smooth & creamy (depending on your blender this may take a few minutes)
- Pour the mixture into a bowl. Give it a really good stir with a fork, then put in the freezer uncovered
- Remove & stir every hour until it resembles the ice cream consistency you’d prefer to serve/eat it at. This may take 3-5 hours.
Extremely yummy homemade dairy free vanilla bean ice cream! Seriously even the kids love it.
