This simple tuna dip recipe must be one of the easiest dips to make and is perfect for the lunchbox (just remember to use a cooler bag and ice brick). It’s a great way of encouraging your kids to eat more vegetables in their lunchbox, plus getting more protein in their lunchbox too.
What I love the most about it is how many different ways you can use it. Here’s some of the ways you can use the dip:
- as a dip served with vegetable crudites (you can add a small amount of crackers too)
- spread it thickly on a good quality wholegrain bread or sourdough, along with some lettuce to make a delicious sandwich
- spread it on sourdough toast and top with fresh tomato and avocado slices, for an awesome breakfast
- cook some jacket potatoes, split them open and stuff them with the dip, sprinkle with some parsley, top with cheese, and melt
- layer it on rice cakes for a simple afternoon snack
Go forth and conquer – use your imagination and make this recipe your own. Add the ways you use the recipe in the comments below so others can be inspired by your ideas. Thanks!
Ingredients
- 125g cream cheese – not quite room temperature
- 95g canned tuna in springwater
Method
- Cut cream cheese in to small chunks
- Place cream cheese in a food processor
- Add the can of tuna, including spring water
- Process until smooth – the tip will be quite soft but will firm up in the fridge.
2 Other Ways
- Pimp up the dip by adding a squeeze of lemon juice and / or some parsley. Include this at step 3.
- Add a can of drained cannellini beans, some garlic, lemon, pinch of paprika and salt and pepper to season, then process all together
Story behind this recipe
Our kids both love tuna but not the smell it has in the lunchbox. I have been mixing cream cheese with tuna for years to reduce the tuna smell. Just recently I was running a Lunchbox Boot Camp for parents in Bridgetown WA, and I wanted to share with them some simple recipes that could help get their kids to eat more vegetables and get more protein into their lunchbox. I included this recipe in the demonstration to show that it doesn’t have to be hard to make nutritious food for the lunchbox.
Just a reminder, you don’t need to be a master chef, or have a big spotless kitchen to make awesome nutritious meals or snacks for your family.
