These Gluten Free Christmas Biscuits are simple to make and are great recipe to get your kids involved in the kitchen. Seriously these biscuits do not get much easier than this. I’ve also included a few ideas to turn them into gifts.
Ingredients
- 125g butter
- 1 tspn vanilla
- 1 tblspn rice malt syrup
- 1 egg
- 1 1/2 cups sorghum flour
- 1 1/2 cups tapioca flour
- 1/4 cup coconut flour
- 1 tspn cinnamon
- 1 tspn ginger
- 1 tspn nutmeg
- pinch of cardamon
- pinch cloves
If you don’t have sorghum and tapioca flour, replace with a good quality gluten free plain flour. I order my through The Wholefood Collective or use Orgran brand.
Method
- Cream butter, vanilla and egg in a food processor
- Add the rest of the ingredients and process until a dough starts to form
- Throw some extra flour onto the bench and take the dough out. Place dough on the flour and gently knead until it forms a soft pliable dough
- Break the dough in half, and roll it out to the thickness you want – I did mine about 1/2cm thick
- Cut into shapes you want gingerbread men, stars, Christmas trees, Santas, circles (baubles) and place on a lined baking tray
- Bake in a preheated 180 degree oven for 12-15 minutes
- Allow to cool
Gift Idea
Tree Decoration
- Before the biscuits cool, use a skewer to put a small hole near the top of the biscuit
- Thread a nice ribbon or string through the hole and tie off so it can hang off the tree
- Make a simple icing to decorate. Hopper Foods have great natural colours and sprinkles
Gingerbread Men
- Cut dough into gingerbread
- Decorate using edible kibble such as these from Hopper Foods or add choc buttons to make eyes
- Or you can just cook plain, and decorate later. Alternatively package up some edible gels and give them with the plain gingerbread man as part of the gift. It’s a fun activity as well as something to eat.
Pretty Stars
- Cut into star shapes and cook per instructions
- Allow to cool, dust with icing sugar
