This does come with a warning that I kind of just wing the amount of veg based on what I have in the fridge.
Ingredients
- 2 to 3 sheets of butter puff pastry
- 5 or so zucchini’s- cut into quarters, then roughly chopped.
- a batch of pesto (i use the Thermomix recipe)
- garlic & ginger
- use whatever other veg you want: I used:
- Brussel sprouts
- broccoli florets
- red onion, sliced
- mushrooms, sliced or diced
- cherry tomatoes, cut in half
- feta cheese
- olives
- goats cheese
- olive oil
- fresh mint
- Italian herbs
- salt & pepper
Method
1. Heat oil over medium heat, add zucchini, add chopped mint and cook until soft.
2. Take out about 1/4 of the zucchini and put in a bowl to the side.
3. roughly mash the remainder of the zucchini and add about 1/2 cup of pesto. Mash together.
4. Rub a bit of oil over a baking tray, and add your puff pastry. Ensure there’s a bit of a lip of pastry around the edge.
5. Spread the mashed zucchini, pesto mix over the base.
6. Top with the other veg
7. I take the excess pastry around the edge (the lip) and fold it over a little so it will become a pie crust around the edges (the kids love this)
8. Bake in a 180 deg oven for 30-40 mins. (Make sure you turn the oven on😂😂)
Add the olives, feta and goats cheese to the middle of the table and allow everyone to top their own vegetable tart with what they would like to add.
Serve with salad or sides of other veg.
