As mum’s we step up to the mark every day, no matter how tired or sick we feel. Mother’s Day is our day. A day where our family acknowledge our strength and love.

Breakfast
- Supersimple pikelets – get them to make a double batch so you have some for the lunchbox
- Topping ideas – peanut butter and banana, yoghurt berries and nuts, berry chia jam and yummy fresh cream
Morning Tea
- Hommus with vegetable sticks and crackers. This makes a lot so there will be spare for the weeks lunchboxes too.
Lunch
- Rice Paper Rolls – the link is for a recipe for tuna rice paper rolls, but you could easily replace this filling with something else, such as poached chicken
Afternoon Tea
- Strawberry muffins – they can make these in advance on Saturday if they wish. This makes 12 so plenty left over for the lunchbox
Dinner
- Spaghetti Bolognaise – the links are for a meat and a vegetarian bolognaise sauce. Turn left over sauce into spaghetti bol muffins.
Dessert
- Raspberry Swirl Chocolate Mud Cake – a delicious fudgy chocolate cake. Add a spoon of double cream and strawberries to the side. If you have them make these in a small muffin tray, you will have plenty for the lunchbox for a few weeks too.
